Revo Foods names partner on €2.2 million EU project to develop 3D-printed salmon

Austrian food-tech company Revo Foods has partnered with Belgian biotech firm Paleo on a €2.2 million project funded by the European Union to develop a plant-based salmon filet.

The collaboration, launched in August, combines Revo Foods’ 3D Structuring technology with Paleo’s precision fermentation process to produce myoglobin—a heme protein that contributes to the color, flavor, and iron content of conventional meat and fish.

The project focuses on incorporating myoglobin into Revo Foods’ vegan salmon alternative, “The Filet – Inspired by Salmon,” to improve its taste and nutritional profile. Revo Foods’ 3D Structuring technology, which uses layered fat and protein to recreate the texture of fish, is designed to support high production volumes, with its recently opened “Taste Factory” in Vienna capable of producing up to 60 tons of plant-based products per month.

This partnership follows Revo Foods’ wider strategy to expand plant-based seafood options, with “The Filet” already available across Europe in retailers such as REWE and INTERSPAR. The addition of myoglobin is expected to make the product’s flavor profile and nutrient density more closely resemble that of traditional salmon, while also reducing its environmental footprint compared to conventional fish farming.
